This is a New England IPA that focuses on the magic of "biotransformation." The real secret here is the use of Yellow Flower yeast, a unique strain discovered on Réunion that’s famous for unlocking incredible fruity esters during fermentation.

They’ve paired two heavyweights to complement that unique yeast profile:

  • Citra: Providing the foundational notes of sweet orange, pink grapefruit, and a touch of lime.
  • Nelson Sauvin: Bringing that signature New Zealand "funk"—think crushed white grapes, gooseberry, and a hint of passion fruit.

Tasting Notes

On the pour, it’s a stunning, glowing apricot colour with a dense, creamy white head. The aroma is a total riot of tropical fruit and "dank" floral notes, thanks to that specialized yeast. The first sip is remarkably "pillowy" and soft on the tongue; you get waves of ripe stone fruit and grapefruit, followed by the sophisticated, dry vinous character of the Nelson hops. It finishes with a light, rippling tropicality and almost no bitterness.
