Modern craft beer, particularly styles like New England IPAs (NEIPAs), DIPAs, and Pale Ales are packed full of delicate hops. Brewers use massive amounts of these hops to give the beer those huge, juicy, tropical, and citrus aromas we all love.
However, the essential oils in those hops are incredibly fragile. They are highly sensitive to three things: oxygen, light, and heat. When an unpasteurised craft beer sits on a warm supermarket shelf or in a stifling warehouse, the heat accelerates the degradation of those hop oils. A beer that tasted like an explosion of fresh mango and pine at the brewery can lose its vibrant flavour profile in a matter of weeks if left at room temperature. The beautiful haze can drop out, the vibrant colours can darken, and the taste becomes flat.
The “3-to-1” Rule
In the brewing industry, there is a widely accepted rule of thumb regarding beer storage: a beer stored at 21°C (room temperature) will age as much in one week as a beer stored at 3°C will age in an entire month. Keeping beer cold effectively hits the pause button on the ageing process, locking in the brewer’s intended flavour.
