It's been a while since we've had anything from our Scottish friend. We are so pleased to introduce Occasional Irregularity 🍓🍰
The legends at Sinnister Brew have finally entered the dessert stout arena, and they’ve brought a literal masterpiece with them. Occasional Irregularity is a monstrous 10.3% Barrel-Aged Imperial Dessert Stout that drinks like a liquid strawberry cheesecake.
This "big old impy" has lived a serious life, blended from Scottish Whisky, Irish Whiskey, and American Bourbon casks for a complex foundation of oak and peat.
The Profile
The Build: Re-fermented on heaps of Scottish strawberries, then conditioned with toasted coconut, Tahitian vanilla, and Amburana wood.
The Flavour: Authentic, tart berry notes meet creamy vanilla and toasted coconut. The Amburana wood adds a stunning finish of cinnamon and sandalwood.
The Vibe: Thick and indulgent. It’s an absolute event in a glass.

A hazy New England-style Pale Ale designed for easy drinking without sacrificing complexity.
Hops: Wai-iti, Citra, and Nelson Sauvin.
Tasting Notes: Expect a vibrant burst of stone fruit (peach and apricot) from the Wai-iti, backed by the classic citrus and gooseberry notes typical of Nelson Sauvin. It is vegan-friendly and has a smooth, soft mouthfeel

A classic hazy IPA that leans into a powerhouse trio of popular hops.
Hops: Citra, Mosaic, and Idaho 7.
Tasting Notes: This is a "juice bomb." You’ll likely find heavy tropical flavors like mango and pineapple from the Idaho 7, paired with the blueberry and dank pine undertones of Mosaic
Clockwork | Double IPA (8.0%)
The "heavy hitter" of the group, this DIPA is built with a complex hop bill for maximum impact.

Tasting Notes: Highly rated for its "super fruity" profile. It features a slight grapefruit bitterness that perfectly balances its hazy body. It’s described as having a pleasing dankness without being overly sweet, making it an excellent example of a modern collaborative IPA.

This brew features a "triple-threat" combination of heavy-hitting hops, lavishly dry-hopped for maximum impact:
Citra & El Dorado: These two bring a massive burst of tropical pineapple and bright citrus zest.
