Golden Sour with Kumquat and Greek Mountain Tea
Brewed in collaboration with our friends at Seven Island Brewery, we blended a super citrussy base beer, brewed with local Scottish barley, wheat and oats and primarily fermented with Brettanomyces.
Seven Islands brought us wild local ingredients from Greece which we added post-fermentation, kumquat from Corfu and wild mountain tea from Mount Olympus.
We celebrated the collaboration at a classic Dundee pub – The Phoenix, which seemed like a fitting name.
